Orange & Almond Cake

BAHAN-BAHAN

  • 2 large oranges(lagi bagus kalau dapat cari Navel orange)
  • 5 eggs
  • 1 1/4 cups caster sugar
  • 1 tsp vanilla extract
  • 2x110g packets almond meal(serbuk badam)
  • 1/4 cup plain flour
  • 1 tsp baking powder
  • icing sugar,to serve
  • double thick cream,to serve
CARA PENYEDIAAN
  • 1.Place whole oranges into a large saucepan.Cover with cold water and bring to the boil over high heat.Reduce heat and simmer,covered,for 45 minutes,adding more water if required,until soft.Drain and cool.Roughly chop and place into food precessor.Process until finely chopped and pulpy.
  • 2.Preheat oven to 160c.Grease and line a round cake pan with baking paper.Using electric mixer,beat eggs,sugar and vanilla extract in a large bowl until thick and creamy.Add orange pulp and almond meal.Sift flour+baking powder over the mixture.Using a large Metal spoon fold together.
  • 3.Pour mixture into the prepared pan and bake for 1 hour 15 minutes or untill cake is cooked through when tested in the centre with skewer.Stand for 30 minutes before turning out onto wire rack(rest the cake).Sprinkle with icing sugar and serve with thick cream or yoghurt.
  • NOTE:Oranges can be cooked up to 2 days in advance and store in a snap lock bag in fridge.
